Welcome to Australia! You will be greeted by your guide and provided a private transfer to your hotel, Hotel Indigo, an IHG Hotel. Your hotel is located in the center of Adelaide, just moments from Central Markets and Chinatown. The neighborhood boasts a vibrant culinary scene and a strong sense of character. This includes the Standard Room for 3 nights. After you settle into your room, you will get to know your fellow travelers at a Welcome Event at the rooftop bar with wine and canapés.

 

Day 2: February 15, 2027
Adelaide Hills/ Barossa Valley

We’ll start our first day driving through the magical Adelaide Hills, which is home to some of South Australia’s best food, wine and scenery. Begin your Australian wine adventure the best way possible- with a sparkling wine experience. Deviation Road is a boutique winery that specializes in sparkling wine so we will enjoy a private tasting there. We will continue through the hills and then travel through to the famous Barossa Valley to find some more wine. We’ll start at the renowned Henschke, one of Australia’s oldest family-owned wineries. Stand in awe of the ancient and gnarled vines of the Hill of Grace and then settle into your charming private tasting room to enjoy a range of wines paired with a chef-designed 3 course lunch, curated to elevate the flavor and experience of each wine. This evening will be yours to do as you please back in Adelaide.

Day 3: February 16, 2027
Fleurieu Peninsula

Located 40 minutes south of Adelaide, the Fleurieu Peninsula offers some of South Australia’s finest coastal, scenic and culinary experiences. Spend quality time in nature’s playground discovering charming towns including Victor Harbor, Willunga, Normanville, Goolwa, Yankalilla and Rapid Bay. Once we arrive, we will start with our first winery today, Hugh Hamilton Wines, which brings you 185 years and 6 generations of wine making experience. Enjoy a personalized private tasting with the winemaker then we will head over to the historic Victory Hotel for a three-course lunch with wine. Enjoy spectacular views of the Sellicks Beach and Aldinga Bay at this restored pub dating from 1858. The hotel is renowned for its extensive cellar of local, Australian and international wines.

After lunch, we will travel back towards Adelaide with a stop at Penfolds Magill Estate for the Ultimate Penfolds Experience. Penfolds is Australia’s leading red wine producer and we will have a two hour guided tour and tasting at the estate. The rest of the evening is yours to do as you please.

 

Day 4: February 17, 2027
Coonawarra

Today, we will check out of our hotel in Adelaide and head towards Coonawarra. We will stop for lunch and a wine tasting at Padthaway Estate Winery, then continue to your accommodations for the night at Coonawarra Motor Lodge. After you get a chance to check in and freshen up, we will head out for an incredible dining experience at Mayura Station. Located on the Limestone Coast, Mayura Station is one of Australia’s oldest cattle properties and most famous steakhouses. This evening, experience their award-winning Wagyu beef. The 4-course menu is designed to showcase the very best cuts of beef and will paired with a specially selected premium wine for each course. At the commencement of the evening, the chef will go through some of the unique aspects of the farm, the history of Wagyu Cattle and talk through the cuts of beef that are being served.

Day 5: February 18, 2027
Warrnambool

Today, we will hit the road again and continue our explorations. In the heart of South Australia’s hidden gem the Limestone Coast, midway between Adelaide and Melbourne, lies the town of Naracoorte. Naracoorte is home to the World Heritage listed Naracoorte Caves which are World Heritage listed because of the importance of the fossils at the site, preserving Australia’s most complete marsupial fossil record. The Naracoorte Caves are part of the 800,000-year-old Naracoorte East Range. They are World Heritage listed, and one of the world’s most important fossil sites.

After all the cave and fossil exploration, it’s time for some wine and lunch at Wynns Coonawarra Estate, then continue to Warrnambool for your one night stay in an Executive Oceanview King at Deep Blue Hotel & Hot Springs. Tonight, we will stop by a maritime museum and then have a three course waterfront dinner.

 

Day 6: February 19, 2027
Great Ocean Road to Melbourne

 Drive one of the world’s most scenic coastal touring routes, the Great Ocean Road, which spans 151 miles along the stunning coastline of Victoria’s south-west. Take in the panoramic views as the road winds along cliff tops, through picturesque sea-side towns, up to breathtaking headlands, down onto the edge of beaches, across river estuaries and through lush rainforests. Outside Apollo Bay the road winds through the center of the Great Otway National Park with its beautiful untouched rainforests, before returning to hug the coast for the entire length of Port Campbell National Park. This is the most famous section of the Great Ocean Road, featuring an amazing collection of rock formations known as the 12 Apostles which have been carved out of the headland by the fierce waves of the Southern Ocean.

Apollo Bay Hotel is located right in the heart of Apollo Bay, along the breathtaking Great Ocean Road. Winding around the eastern side of Port Phillip Bay and taking in vast ocean views and sheltered beaches, Mornington Peninsula is home to quaint coastal villages and hinterland hamlets, acclaimed wineries and restaurants, luxurious spas and renowned golf courses. It is possible to travel from top to toe of the region within half an hour, passing colorful bathing boxes strung along the beachfronts of Dromana, Rosebud and Mornington, then inland through the rolling hills of the verdant hinterland to orchards, market gardens and wineries. With everything on the peninsula within easy reach, there’s plenty of ways to fill your day.

Savor a gourmet lunch set against the picturesque backdrop of the region, showcasing the finest in farm-fresh produce.

After lunch, head to Four Pillars Distillery for a tasting that highlights the innovative spirit of the local craft distilling scene. Your journey through the region’s flavors and aromas concludes with a visit to the TarraWarra Museum of Art, where you can appreciate a fascinating collection of Australian art in a stunning architectural setting.

Day 10 February 23, 2027
Hobart

After checking out from your Melbourne hotel, we will go to the airport to fly to Tasmania (flight included). On arrival at Hobart airport, you will be met by your host and local Tour Manager who will be with your group while you are in Tasmania.

Your luggage will be dropped at the hotel before you head to the wonderful Mount Field National Park.  Refresh the senses with a gentle walk to Russell Falls before lunch at the Waterfall café.

After lunch, head to the wonderful Stefano Lubiano for a hosted tasting before arriving in Hobart around 5.00 pm. We will check into The Henry Jones Art Hotel for four nights. This is an art deco hotel, located on Hobart’s waterfront on the site of an old jam factory which dates back to 1804. The hotel is furnished with over 300 artworks and an ever-changing exhibition, created to present itself as a fusion of art, heritage, tradition and nature. The hotel houses rooms and suites all uniquely different and furnished with the hotel’s history and contemporary art as the forefront of each space.

Hobart Seafood Cruise

After a leisurely breakfast, meet your tour manager in the lobby for the short walk to the Marina for a Tasmanian Seafood Cruise. This 4.5 hour cruise will see you feasting on the freshest seafood straight from the ocean! Cruise in style and comfort aboard your catamaran, along some of the most untouched and idyllic waterways in the world. Your culinary and sightseeing cruise will take you down to Bull Bay on Tasmania’s Bruny Island. Come face to face with towering sea cliffs, sandy beaches, only accessible by boat, and spot sea life such as dolphins, whales, seals and sea birds whilst sampling the freshest wild seafood caught and cooked on board the vessel. Start the day with a seasonal fruit platter including Tasmanian cheeses and indulge in a selection of premium local wine, sparkling and beer. Throughout the day your skilled diver will harvest live periwinkles and sea urchins and will expertly prepare these for you on board. You will also feast on live Tasmanian abalone, live Tasmanian rock lobster, oysters, urchins, mussels periwinkles and whole Atlantic Salmon. Huon Valley

Meet your tour host in the lobby after breakfast for a full day private Taste of the Huon tour. This 8-hour tour takes you into the picturesque and fertile lands of the Huon Valley. Visit the small town of Birch’s Bay where unique Sheep Whey Gin and cheeses are being created. Indulge in an extended tasting and product presentation. Follow the coastal road into the quaint township of Cygnet for a tasting in a small family-owned cellar door. The town is located between the beautiful D’Entrecasteaux Channel on one side and the majestic Huon river on the other. Enjoy a lunch created of local products on an award-winning winery, Willie Smiths Apple Shed. Return to Hobart, where you will be transferred to your Hobart accommodation.

Day 13: February 26, 2027
Moorilla and Mona

Your 8-hour Moorilla experience commences from Hobart to MONA, on a high speed ferry. Your self-guided exploration of the subterranean galleries begins with an introduction to Mona’s “O” device by a gallery attendant. After your art binge, head to your lunch destination at 12:30pm for a lunch of seasonal local produce, matched with a glass of wine from Moorilla’s Muse or Praxis Series. You will then meet with your expert Moorilla host, who will guide you through a tasting of the Moorilla range and discuss the rich history of Moorilla and the finer points of their winemaking techniques.  You will be collected from Moorilla and taken to visit Bonorong Wildlife Sanctuary in the afternoon.

This 2.5 hour feeding tour gives you plenty of opportunity to interact with the critters. You’ll get up close to as many different animals as possible while supporting an incredible cause. The Feeding Frenzy may include feeding the wombats their daily snacks, giving the cockatoos their (sometimes) wriggly treats, hooking the Tassie Devil onto its snack and starting a game of tug of war, meeting the two unique species of quoll, feeding fresh eucalyptus to the koalas whilst stroking their thick, woolly fur and hand-feeding the tawny frogmouth birds who swallow their food whole! Then why not try spotting the secretive and little-known Tasmanian bettongs in their grassy nests or watch the sweet-toothed sugar gliders come out for their dessert and many more.

After the sanctuary, you will have time to go back to the hotel before the farewell dinner tonight. Landscape Restaurant & Grill creates unforgettable dining experiences in the heart of Hobart’s Hunter Street waterfront precinct. Much of the inspiration for Landscape came from the artworks of John Glover – striking, unforgettable paintings that capture the life and beauty of the young Tasmanian colony in the 19th century. A feature of Landscape – the Asado Grill – is fired up daily with a selection of sherry, bourbon, or port casks from the Tasmanian Cask Company. These seasoned timbers which we char and smoke over, give a unique flavor to the dishes. Their menu of reimagined classics showcases the best of the season, and the sole purpose is to offer a memorable dining experience for your last night in Tasmania.
